Before providing the label with the 'label' command, you must set the
'labelmask' to contain a '%g' at the Position of your greek letter, e.g.
set labelmask '.%g'
label "Ca"
should produce an 'alpha' for the second letter.

As far as I remember, this does not work with Raster3d-Output, though,
you'll have to use gimp et al.
